    Super Fluffy Omelette

    Makes 2 Servings

    INGREDIENTS
    ————
    5 large egg whites
    3 large egg yolks
    2 tablespoons unsalted butter, halved
    Salt, to taste
    Pepper, to taste
    Fresh chives, chopped, for garnish

    PREPARATION
    ————
    1. Separate the egg whites and the egg yolks in two separate bowls. You’ll only need 3 yolks, so discard the other 2 or reserve for another use.
    2. Whisk the egg yolks until they become homogenous and pale in color. Set aside.
    3. Transfer the egg whites to a large bowl and whisk until they triple in size and become white with medium peaks.
    4. Carefully fold the egg yolks into the egg whites until fully incorperated.
    5. Pour the egg mixture into a medium nonstick frying pan with a lid. Cook over medium-low heat until bottom of omelet has set, about 5 minutes.
    6. Lift up each side of the omelette and drop a tablespoon of butter underneath.
    7. Cover the pan and cook for another 5 minutes, or until the top of the omelette has set.
    8. Remove the lid and season the omelette with salt and pepper. Remove the pan from the heat.
    9. Fold the omelette onto a plate and sprinkle with chives.
    10. Enjoy!

I just made your Super Fluffy Omelette with my duck eggs. I filled it with freshly made pesto and topped it with shaved Romano cheese. It was delicious. I took a photo but I do not know how to embed it here. So I am putting it on IG, Facebook, Twitter and Pinterest. Of course, I am giving you credit for it. Let me know if you like it. Thanks for the great recipe idea. I don’t think I can go back to regular omelettes.

Hi, and thank you for enjoying our recipe! ๐Ÿ˜Š

I would absolutely love to see how it turned out, and I understand that it can be a bit confusing how to embed a picture to things. I had an idea though! If you could email the picture to us at flavorsmasher@gmail.com we can make a post about it. I would love for everyone to see your omelette ๐Ÿ˜Š

I like the crispy, nutty flavor of browned cheese; I have taken to putting down a very thin layer of shredded Jarlsberg in the frying pan before the eggs. It gives a crunchy, full flavor. And makes for a beautiful brown crust.
