4 Classic Desserts Made Vegan

Hi everyone, and Happy Saturday!

I hope you had a wonderful Valentine’s Day with your special someone and gave them the extra pampering they deserved. 🙂

I do want to apologize for not posting on Thursday or Friday. There has been a lot of things going on right now. With my baby shower being Sunday and having to help our roommate move out, this place has been a little hectic. However, I feel I have made up for that with today’s video post, but it is kind of long. :p

Lately I have felt like I haven’t contributed enough to those of you who are Vegan, so today I went out and found four very yummy desserts made Vegan! Boy, I’ll tell you the macaron recipe took me by surprise. I had no idea you could use chickpea liquid the same way as egg whites. It’s definitely one I’ll be trying out for sure. 😀

Another thing I would like to add is we at FlavorSmasher have added a new type of post. It’s called “Flavor Express,” and these little posts will include a picture and a little post about different foods my husband and I try all across Michigan, US.
I do plan to e-mail those of you who are subscribed when there’s a new article, but they won’t be as frequent as the video e-mails. 🙂

Now, as always the recipes will be in the comment section below, all nice and neat for you to read. I do hope you enjoy them, and please don’t be afraid to e-mail me if you’ve done a recreation. I’d absolutely LOVE to see the things you create.

Until next week, everyone. Enjoy the flavor! 😀

    Chocolate Cake
    Servings: 10

    Ingredients for Cake
    ——————–
    • 3 cups whole wheat flour
    • 1 ½ cups dark cocoa powder
    • 1 cup sugar
    • 1 tablespoon baking soda
    • 1 ½ teaspoons baking powder
    • 1 pinch salt
    • 3 cups almond milk
    • 1 cup coconut oil, melted
    • 1 ½ cups applesauce
    • 1 ½ cups maple syrup
    • 1 tablespoon apple cider vinegar
    • 1 tablespoon vanilla extract
    • berry, of choice, for garnish

    Ingredients for Frosting
    ————————-
    • 30 oz full-fat coconut milk, 2 cans
    • 3 cups dairy-free chocolate chunk
    • ¼ cup coconut oil, melted
    • 2 cups powdered sugar

    Preparation
    ———–
    1. In a microwave-safe measuring cup, or in a small pot on the stove, heat the coconut milk until hot, but not boiling (about 2 minutes in the microwave).
    2. Place the dairy-free chocolate in a large bowl and pour the hot coconut milk over it, allowing the milk to melt the chocolate. Mix well to combine.
    3. Once the chocolate is melted, add the coconut oil and powdered sugar. Beat with a hand mixer or whisk until smooth.
    4. Cover and refrigerate overnight.
    5. Preheat the oven to 350°F (180°C). Grease 3 separate 8-inch (20-cm) round cake pans and set aside.
    6. In a large bowl, add the whole wheat flour, dark cocoa powder, sugar, baking soda, baking powder, and salt. Whisk to combine and set aside.
    7. In a separate large bowl, add the almond milk, coconut oil, applesauce, maple syrup, apple cider vinegar, and vanilla extract. Whisk to combine.
    8. In two batches, add the dry mixture to the wet mixture, folding with a spatula until combined. Some clumps are okay.
    9. Divide the batter evenly between the 3 pre-greased cake pans and bake for 35–45 minutes, or until a toothpick comes out almost entirely clean. Cool completely.
    10. Remove the frosting from the fridge and mix it up well.
    11. Choose which cake will be your bottom layer and cover evenly with about 1 cup (115 G) of frosting. Top with the second layer, frosting evenly again. Add the final layer and frost the top and the sides of the cake generously, topping with berries of choice for garnish.
    12. Enjoy!

    Chocolate-Glazed Donuts
    Servings: 6

    Ingredients for Batter
    ———————-
    • nonstick cooking spray
    • 1 cup all-purpose flour
    • 1 teaspoon baking powder
    • 1 pinch salt
    • ½ cup unsweetened applesauce
    • ½ cup almond milk, or dairy-free milk of choice
    • ¼ cup maple syrup
    • 2 teaspoons vanilla extract
    • 1 teaspoon apple cider vinegar

    Ingredients for Chocolate Glaze
    ——————————-
    • ½ cup powdered sugar
    • ⅓ cup cocoa powder, dairy-free
    • ½ cup almond milk, dairy-free milk of choice, as needed
    • vegan sprinkles, optional

    Preparation
    ———–
    1. Preheat the oven to 375˚F (190˚C). Grease a 6-indent donut pan with nonstick spray.
    2. Combine the flour, baking powder, and a pinch of salt in a medium bowl.
    3. In a large bowl, combine the applesauce, almond milk, maple syrup, vanilla, and apple cider vinegar. Whisk until smooth.
    4. Using a spatula, fold the dry ingredients into the wet ingredients in two additions until thoroughly combined.
    5. Pour the batter into the donut pan and smooth the tops with a spatula.
    6. Bake for 15–20 minutes, or until golden brown and a toothpick inserted in a donut comes out clean.
    7. Let cool for 5–10 minutes, then invert onto a wire rack to cool completely.
    8. Combine the powdered sugar and cocoa powder in a wide, medium bowl. Add the almond milk, about 2 tablespoons at a time, until the glaze is smooth, but thick enough to set on top of the donuts.
    9. Dip the top of each donut in the glaze and return to baking rack to let any excess glaze drip off.
    10. If using sprinkles, add them immediately after glazing the donuts. Work quickly, as the glaze will harden very fast.
    11. Enjoy!

Remarkable post, both in terms of the number of recipes you offer, and also in achieving the “impossible” by making them vegan. That said, I’m most excited to hear about “Flavor Express.” Can’t wait to read about your culinary travels, and to see the pictures!
